In the hall I would have a bulkhead as the without the doors may seem to tall for a narrow space. Plus Sooty may be right - the taller the door the more chance you have of problems with the hinges and warping. I actually prefer them without a bulkhead as you can never have enough storage. So in the bedrooms I would do the sliding doors to the ceiling.
