Default Sausage rolls, chicken nuggets, chicken and tarrgon sandwhiches

First off.. the chicken Nuggets..
These are a firm family favourite.. and oh. so. easy.

My variations -

She uses Ritz crackers. i heartily recommend Jatz. and if you want an adult version - Black Pepper Jatz.

(it is worth blitzing the jatz in a blender. I do a few boxes at a time and always have them on hand. They last fine in the pantry in a sealed storage container) I also never fry these.

I make them as per directions and put them on a tray in the oven.. no oil etc. They cook perfectly.. (i am not very precise about these things but go for 180- 200 for about 20 - 30 mins depending on your oven.

I never leave the chicken in the buttermilk for more than an hour or two. ie. After school pick up - add the chicken to the buttermilk. Place in fridge in the bowl. Argue with everyone about homework, whack through some laundry and roll in jatz and place on tray.

Jamie's Sausage rolls. These come from the 30 min meal recipes and are a breeze. I have been buying exceptionally good (and uber expensive pastry $10.95 for a sheet) but these are to. die. for. Which is impressive given i neither like sausage rolls or sausages. LOL.

Basically take your sheet of pastry - the cheaper stuff is OK too . .lay the sausages along two or three wide (pictures would help but i cant find any). sprinkle on a lil salt and pepper and some fresh thyme or other herbs. .. Roll the pastry over..do the egg wash to seal them and slice them.

I have been doing this with really lovely chicken sausages.. but you could do lamb/speciality sausages etc or cheap beef ones.

they go in the oven for about 25 mins at 200'c

Tarragon Chicken Sandwhiches.

I often make the roast chicken with tarrgagon under the skin etc. but a roast chicken from the supermarket is fine. Cut into lil cubes.. finely chop the tarragon.. add to a bowl and add a lil aioli. (I use Paul Newman Aioli as it is a perfect mix and not too garlicky or lemony. You can add a lil lemon juice if you wish. Use thick bread or turkish bread... layer some rocket or oak lettuce leaves.. and add the mix.. Spread it out and top. If you wish you can use normal bread and trim the crusts.

Oops yes chicken breast. You can also use chicken tenderloins from the butcher/deli ... Nothing added..no mincing etc and it is never dry....they are very moist from the buttermilk

The chicken was melt in your mouth but the crumbs looked a little pale and dry baked in oven. Mr RR said he would prefer them fried.... but that buttermilk treatment was amazing............thanks Lanne or and also Nigella..

I have found when the crumbs were dry.. it was because they were too chunky.. the more crushed the jatz..the finer the layer and then they arent dry.
If that makes sense. I do love what the buttermilk does!
