I have been eating salad for dinner a lot lately. It is getting a little boring. So what are some suggestions to toss in for a healthy but satisfying salad?

I love boiled eggs - thanks Thisisme.
At the moment I have roast chicken, mushrooms, tomatoes and baby spinach. I don't add avocado because I have that at lunch time. I do love avocado.

I have a salad that was designed to use up Christmas leftovers, but I make it all year whenever I am asked to bring a salad!
Original recipe is 100g snow peas (popped into boiling water for 30 seconds then cooled), 3 sticks celery thinly sliced, 2 spring onions, 2 Tablespoons toasted slivered almonds, 2 Tablespoons dried cranberries, 1 mango sliced, 2 cups chopped turkey or ham.

Dressing is 2/3 Cup mayo, 1 Tablespoon mango chutney, 1 tsp curry powder, 1 Tablespoon water. Keep leftover amount in fridge if this qty is too much for your sized salad.

I have amended the recipe and

- add some baby spinach leaves to bulk it up a bit
- use cooked chook instead of turkey
- sometimes use sultanas instead of cranberries
- use stone fruit instead of mangoes when they are too ridiculous priced.

It is yummy and even when dressed, it keeps better than some other salads, which go limp ASAP.

What about something with a more greek flavour...
add some olives..change up the lettuce.. add some different tomatoes and cu***ber (maybe leave off the fetta? if dieting)

What about adding some steamed snow peas...

Some pumpkin salad... various nuts would change this one up a lot

A cous cous salad with grapes and almonds and some chunky cu***ber etc..

For low fat I would add some grated carrot.......some chopped beetroot amd you could swap chicken 4 tuna... I mix tuna with natural yoghurt....or natural yoghurt on the beetroot it is yum... I buy farmers union natural yoghurt not greek style......Sometimes a few boiled potatoes..........some four bean mix.......... You can mix yoghurt with some djon mustard and this is nice on Chicken.... Corn too....... also cu***ber or picked cu***bers chopped up......

Sometime cottage cheese is nice.........I fill mushroom cups with cottage cheese for a snack............
