Default Poffertjes (little Dutch pancakes)

Poffertjes

450g SR flour
900ml full cream milk
3 eggs
Pinch of salt
1 teasoon vanilla essence

• Beat all ingredients together with electric of hand mixer
• Dispense mixture into large squeezey (sauce-type) bottle) and
• Leave to stand for approximately 1 hour in the fridge (to thicken).
• Warm Poffertjes pan on medium heat (approximately 3-4 minutes)
• Lightly brush pan with edible oil using pastry brush (I use Canola oil)
• Squeeze batter/mixture into pan (be careful not to overfill)
• Use skewers to turn Poffertjes as bubbles appear on top of mixture.
• Cooking time should be no longer than 2-3 minutes on each side.

Traditional Dutch Recipe

250g plain flour
250ml full cream milk (warmed)
1 egg
10g yeast
2 dessertspoons golden syrup
Pinch salt

• Sift flour

• Pour into bowl and put in warm place for batter to rise (approx ¾ hour)
• Pour thickened mixture into large squeezey (sauce-type) bottle)
• Leave to stand for approximately 1 hour in the fridge (to thicken).
• Warm Poffertjes pan on medium heat (approximately 3-4 minutes)
• Lightly brush pan with edible oil using pastry brush (I use Canola oil)

Suggested toppings:
- traditional …. butter & icing sugar
- maple syrup
- lemon juice
- chocolate sauce & cream

They are delicious ... but you will need to use a Poffertjes Pan .. they are a cast iron flat pan with little concave circles (usually 19) in them. I have seen then at Harris Scarfe. I've also seen electric ones (not sure how good they are) at Myer, Target and K-Mart.

Aha! Definitely better than pancakes or pikelets. These are a huge hit in our household on a weekend. My recipe has 50ml more milk and I usually add a little bit more sometimes. Unfortunately we never rest ours for the hour, too eager to eat One batch is not enough though Don't waste your money on the electric pans with the pull down lid, my neighbour brought one and it was useless. The heavy pans are the best and cook nicely on the stove top. My 8yo DD cooked them today (her Dad made up the mix).

Lemon and Sugar (DH's favourite)

Every market I have ever been to has these little morsels of goodness......................dusted with icing sugar and a little maple........................OMG Yummo.

I went to a market the other day and a lady was making them in electric appliance.....I'm thinking NO that is wrong must be done in cast iron pan....

If I had a pan I would be in trouble (my hips/my butt).....better leave for market days.

But could u make these in a normal frypan I suppose.....pikelet like?

Yes, you could make little pikelets with the mixture.

My girlfriend used to use leftover batter (from our market days) and put them into her electric omelette maker ... her kids loved them.

I hear you Rosie, if I don't buy it I don't eat is my motto. I save these things for cravings that mean a bit of work.....like if I really want it I have to get dressed get in the car and go......so if I don't buy the pan I won't make them and I won't eat them.....now I am trying to pretend like you can't do them in a normal pan
