Default pancakes - too easy

so I have tried pancake recipes in the past and I always, always mess them up, so I end up just getting the shakem up just add water ones instead...

but recently I found a recipe and I can't quite recall which site it was on, but I tried out this recipe for pancakes and took on board some of the comments underneath the recipe of people who had reviewed it and really liked it but added just a couple of things to make it just right, anyhow here it is and it is just sooo easy

1 cup of self raising flour
1 cup of milk
1 egg
table spoon of caster sugar (or not, it wasn't in recipe but was in comments and I do add it)
splash of vanilla essence

put all the ingredients in a bowl, mix it all up and there ya go :-)

I have learnt that medium/high heat seems to work best for me, and I take the frypan off the heat for about 30 seconds after I make one while I put lemon and sugar on the first one, stops the butter burning when you put the next bit of butter in the pan for the next pancake

when it is that easy to make it isn't worth buying the instant stuff anymore

oh that makes about 4 maybe 5 thin pancakes, I like to roll mine up, you might need to add a little more milk if it is a little thick and more like a pikelet, I usually double the recipe and put the left over in the fridge for the next day

great, I hope you like them as much as I do , I smother mine with lemon and sugar, I haven't ever tried pancakes with strawberries and cream...mmmm one of these days

My son loves the lemon and sugar.
For me it is melted butter in the pan add a chopped banana, honey and walnuts till warm and pour over pancakes. I also sprinkle cinnamon on top.
