Default Packeting Opening Princess

We are having dinner for 6 tonight to celebrate A's birthday.

He invited people - without realising he was being flown to his parents (SURPRISE!) and wouldnt land until 6:05pm lol. Dinner is at 7..

I had a bit of a plan. The plan has gone south. I worked until 2am and was up a lot between then and 7am with a sick lil boy. OH. SO. TIRED.

I am NOT cooking for 6 people and managing to whip up something awesome between 6:45 (if lucky) and 7pm LOL nahhh. So I have earned my crown of packet opening princess.

I went to an upmarket cafe who do the BEST salads. Really interesting and unique things I would never in the land of ever whip up. They are expensive salads for lunch but.. buying the larger size x a couple actually makes them fairly affordable (the alternative being making them and buying a whole pile of ingredients I dont have in the cupboard. I thought i would share in case anyone else finds themselves stuck.

Entree - we did say 7 / 7:30 so i thought an open ended starter would be good.

'Fancy Dips' x 2 from nice market, some salami embedded with olives, actual olives and some Bangalow Smoked Ham (it is soo good I will name drop - worth looking for) and some vintage cheddar on a chopping board lined with lettuce leaves..(in fridge and ready to pull out at 7. I also have some crackers and sticks etc. (I did chop celery but you could skip it. Literally everything came from a packet).

Mains - 2 salads from cafe. One is a beet and potatoe. it is really pink and sweet and oh so interesting. I bought extra beet leaves from the market and padded it out and lined the bowl etc. The other is a roasted potatoe with some middle eastern dressing and poppy seeds. Mmmm yum. Added some mixed lettuce leaves to this one.

The main dish is lemon thyme chicken. It is a chicken breast, covered in a lemon/pepper mix . and topped with a slice of lemon and sprig of thyme. We have it once a week and buy it from the butcher premade. It is $6 per breast but to die for (sure I could make it?) but i figured $36 doesnt go far in meat in terms of roasts etc for 6. I added some turkish bread and a mixed greens w/ whole cherry toms and red onion. I cut the onion and washed some leaves. Cook the chicken in about 30 mins.. and could do it in BBQ trays if you dont want to wash up

Dessert is a Pav from the cheesecake shop. No one is going home hungry.

I have opened packets, lined things and presented well. It is fuss free (being a male birthday) but elegant/pleasant. Everything is opened, cut and so on and all sitting in the fridge ready to serve. I set the table after lunch.

I have mucked around making iced water. I have used a muffin pan - cut the lemon into thin slices, adding one slice to each muffin try. Then adding filter water.. and froze. Now we have ice with the lemon slice embedded. Have also done a long tub of strawberries to add to another container. Looks special. Did it after breakfast.

I am going to curl up with a coffee and wait until it is time to go to the airport. just the way it should be

OMGoodness I bow to you Princess. You are truly the master of packet opening. But you know what - I love your style. Between the 2 of us we are slowly educating my DH. His idea of a dinner party in the past was a 3-4 course meal that we have slaved over. I keep trying to explain to him if we had more relaxed dinner parties like yours I would be happy to do it more often. He loves to have people over so this is swaying him.
One of my favourite cheat dinner parties is to go down to our favourite Indian restaurant and buy everything. Not cheap but I could never cook food as fantastic as they do. So I buy the food and place it in nice serving dishes. And usually cook a lemon-lime tart. Because I only have to make 1 dish it is no big deal.
Anywhooo have a fabulous dinner party tonight. Happy Birthday to your hubby and I hope Lochie feels better soon.

See your "sick" day is most people on a good day...ROFL...

You really can make greatness out of cleverness and you are prime example.

Because I am of Italian background I am also a from scratch when people come round.......but I have a few tricks up my sleeve...

Hope he enjoyed himself...............he has such a great wife....

Hugs to that little man.......hope he feels better soon...

I understand I feel like that cold from that cough medicine add in living in my head atm...............my sense of taste & smell gone....

I am stealing your lemon slice in muffin pan just so you know ok................

I am one of those people that feels I have to have the house spotlessly clean and have prepared everything from scratch before guests arrive but, at the end of the day, it really is not necessary and I am slowly moving away from that. You do not need to cook/prepare all day to come up with some decent meals as Lanne suggested. There's nothing wrong with that at all.

Why go to all that trouble and wear yourself out before anyone even arrives?

Lizzie - it is well worth stopping in if you are on the southside.. or in fact making the drive if you having an event - The store is called In A Pickle and it is at Coorparoo. (there is also the most fab gift/homewares store next door called Kym and Judes.

The verdict.

everyone loved the food. thought I had slaved all day. I said I made nothing.. all presentation and love. They didn't believe me until i broke down where each thing came from.

I did make fennel. I am not a fan of fennel in salads etc. I dont like that aniseedy taste. ugh. But... i saw a recipe for it the other day and have made it three times since. You slice it and add olive oil, salt and pepper.. lay it out flat on a tray and roast it.. it caramelises and has this wonderful oniony but better flavour. It changes complete. ... Serve with shaved parmesan. There was NONE of that left on the serving dish LOL

There was very little food left (bit of salad - which I am munching on now. (roast potato, rocket, pistachio, caramelised onion and haloumi in maybe some kind of tahini sauce with poppy seeds.. whatever it is it.. it is GOOD.

We got to talking about..whether you really ought to make dinner or packet opening was OK. Everyone agreed.. home made was nice.. but. often when we got somewhere for dinner the 'chef' was exhausted and was in and out to the kitchen constantly and not 'present'. We also decided it was expensive and often recipes failed etc. Overall. we all seemed to agree if the food was of a high standard (ie. not mrs crockets salad and a hot chicken, although that has its place). ...then we could see no reason to make anyone suffer a day in the kitchen when it wasnt necessary. Interestingly, most thought if you were going to buy dinner (ala the indian meal like JA).. it would be better to go to the venue.. and all pay your own or pay for everyone - so you didnt spend too long cleaning up and doing dishes as well.

It isnt cheap. but it isnt over the top if buying a take out salad for lunch but if using it for dinner parties etc it is great value.. The food is always good.

A 'small' take away salad was $11 and with a few leaves added served 6 adults with left overs today. The large take away is $11. I would say about half was left over? They also have catering packs of it. You have to go with what they have on the day unless ordering the catering packs. I just go there before buying anything else and then it always matches. They usually have four salads available.

For christmas I buy 3 small take away salads. it is more than enough salad/sides of up to 8 adults.
