Maybe if he just takes 1 day at a time it will get easier for him as the week goes on. Good luck to your DH.

I think I would restrict him to something from the butchers that he has to either BBQ or roast in the oven, served with salad.

Anything more than that may be overwhelming. Try not to stress yourself over it.
