LORRAINE'S BALSAMIC GLAZED SALMON FILLETS
Serves2 Ingredients:
2 x Salmon Fillets
2 cloves garlic
2 tablespoons white wine
2 tablespoons honey
8 tablespoons balsamic vinegar
2 tablespoons wholegrain mustard
Salt & pepper to taste
2 tablespoons chopped fresh oregano

Method
Preheat oven to 200 degrees C (400 degrees F) line a baking tray with aluminium foil, and spray with non - stick cooking spray.
Coat a small saucepan with non - stick cooking spray. Over medium heat, cook and stir garlic until soft, ( about 3 minutes ). Mix in the white wine, honey, balsamic vinegar, mustard and salt & pepper. Simmer uncovered, for about 3 minutes, or until slightly thickened.
Arrange salmon fillets on foil lined baking tray. Brush fillets with balsamic glaze, and sprinkle with oregano.
Bake in pre heated oven for 10 to 14 minutes, or until flesh flakes easily with a fork. Brush fillets with remaining glaze, and season with salt and pepper. Use a spatula to transfer fillets to serving platter leaving the skin behind on the foil.
Serve with steamed green vegetables such as baby zucchini, asparagus and broccolini.

Chicken Risotto:
1 small onion
1 clove garlic
1 cup aborio rice (washed )
3 cups chicken stock
2 sprigs thyme
2 chicken breasts - bite size pieces or strips
Pinch Paprika
Parsley chopped for garnish

Saute al the above ingredients except the parsley add stock, cook until al dente serve hot with parsley on top

FISH AND CHIPS.
400g white fish ( bream, flathead, snapper etc) cut into strips.
1 egg.
1/2 cup breadcrumbs
1 tablspoon Parmesan cheese
2 large potatoes cut into chip style

Mix breadcrumbs and cheese in bowl
Whisk egg in separate bowl
Place fish pieces in egg followed by breadcrumbs mix completely covering fish.
Barbecue on hotplate until cooked.
Place cut potatol sprayed with oil, on baking paper in hot oven (200C) until cooked through.
Serve immediately.

TASTY BEEF STEW
Ingredients:
1kg chuck steak sliced
1 tablespoon olive oil
1 1/2 teaspoons salt
1 sprig parsley
1/4 teaspoon thyme
2 bay leaves
1 teaspoon Worcestershire sauce
1 large onion sliced
1 stalk celery sliced
3 sliced carrots

Method:
Brown meat in olive oil in casserole dish.
Add seasonings and Worcestershire sauce. Cover casserole and simmer until meat is tender. Add uncooked vegetables to the meat about 1/2 an hour before meat would be tender.

Julie-Ann we have had that a few times over the summer, nice and healthy too. We had the chicken risotto tonight. YUMMO!

Tonight's dinner will be beef in black bean suace. Have recipe at home so will have to maybe post it later.
