Default Gluten Free & Diabetes Recipe

I am looking for a dinner recipe suitable for someone who is Gluten Free and another person who has Diabetes 2. It is for a meal at someone else's home. So it has to be pre cooked and warmed up before serving. I'm a little stumped with this one. Especially with the Diabetes 2 - I don't really know what is a no-no for that lady.
Any ideas?

I think you would be best to get some guidance from the diabetic as she would need the correct balance of carbs, proteins and fat and you won't know this unless you know what she has been eating I suspect.

For gluten free you need to avoid wheat, barley, rye, oats , spelt, semolina, millet, buckwheat, couscous. Also commercial salad dressings, canned soups, tuna in oil or prepackaged stock. Avoid anything made from grain alochol such as beer, ale or white vinegar. No curry powder, dry seasonings and some gravy mixes are also out. That shouldn't be so difficult to accomodate.

Oh no I was thinking of a Thai Red Curry or a Chilli con Carne. It sounds like they might not suit Gluten Free.

To cook for people who are extremely gluten intollerant you may also need to avoid chicken (due to what they were fed). For example my friend who is gluten intollerant can eat chicken, but her sister can not.

When cooking for my friend, I made gluten free canalloni (home made - unless you are a wizz at making pasta dont try this its a royal PITA)

As for diabetes, just ask what they do and do not eat.

To be honest. I would cook a vegan meal.

Edit: Buying gluten free is a lot easier these days, take a walk down the health food isle, there may be some pre packaged spice mixes or dinners there.

The curry looks like a good idea Eli. I'm not allowed chickpeas or apricots. I think I will take 2 meals so I can make sure there is something I can eat both nights. I didn't give them the long list of foods I can't eat. It's so long it's embarrassing.
Darkbyte can you buy gluten free cannelloni? Does it taste okay?

To be honest, I really dont know if you can buy gluten free cannelloni tubes. You can buy gluten free pasta. I have heard it tastes a bit meh. I would be surprised if they didnt do lasagne sheets, which work really well for cannelloni (pre cook the lasagne sheet, add the filling and roll it up like a tube).

You can make gluten free pasta, but be warned, it is very fragile. We had trouble getting it through the pasta machine.

You could go old school and do a stew with gluten free dumplings

Ok, while I'm not gluten free I do have friends who are and we run a twitter chat every Tuesday for allergies and intolerances. Here is the website by one of my co-hosts who is coeliac

It's an awesome website as she puts down menus for the week along with recipes.

I didn't think coeliacs had to avoid buckwheat but I'm prepared to be corrected on that one.

You need to be really careful with preparing food as it only takes a smidgeon of contamination from gluten for the coeliac to have trouble. If you wash all the dishes well before hand and be really careful with any sauces you buy you should be okay.

There may be gluten free canelloni, it's been a long time since I've done that but they're probably made by Orgran. There's a lot of things available at Coles nowadays.

Those recipes look ok, but will depend on finding gluten free stock etc.
I can find other websites for you if you want.

Forgot to address the diabetes. The diabetics I know are all really careful with the type of sugar they eat, making certain to use artificial sweetener when they can't do without and also they try to reduce the fat intake. I've even seen a diabetic order chinese food without oil.

This article explains the different flours and why some people can eat buckwheat and some can't, it seems to depend on if it's plain buckwheat or cut with wheat flour.
