ooh nearly forgot about the baked ricotta also a star - I dry roasted fennel seeds, coriander seeds and ***in seeds and then bashed them in mortar and pestle and added a small amount of chilli flakes and a tiny bit of garlic (I actually think garlic flakes would probably work better than fresh as after bashing it made the seed mix a bit of a paste but it still worked fine).
I then rolled the ricotta in seeds and baked in oven for an hour at about 150C.
You need to make sure the ricotta is well drained otherwise it can fall apart a bit.
