Default Christmas Desserts

Do you make your own Christmas cake, pudding or perhaps fruit mince pies? Do you do months in advance or do you have a recipe that works the week before? Tell us about your Christmas cooking and even better maybe share your favourite Christmas Dessert recipes.

Cooking is not really my thing but I used to make my Nanna's Fruit Mince Pies. I will probably be in big trouble for sharing the recipe with you but I won't tell if you don't.
So the fruit mince is not the key here. I can remember when living in Belgium I was missing Nanna's fruit mince pies and rang her to ask her what was the secret to her yummy fruit mince - Robertsons Fruit mince in a jar. Our whole family had been fooled.
But the pastry is the real secret and very tricky to use.
227gm margarine
114gm sugar
170gm self raising flour
170gm plain flour
57gm custard powder
57gm cornflour
2 eggs

Cream butter & sugar
Add eggs slowly
Add sifted flours & rub in
Divide dough in 2 parts, wrap in glad wrap & refrigerate overnight (it lasts 2 weeks in the fridge).
Spray mini pie tins.
Set oven at 210c and cook until golden.

The dough is too soft on the first roll but perfect on the 2nd time it is rolled. It also shrinks a bit so make a little bigger than what you want.

If you make these I know a very large family who will be happy to join you to eat them

I don't like mince pies at all but home made pastry is always yum...

No I haven't made them the last 2 years. I have been too busy chatting with you all here.
But my Mum is making them this year. I can't wait to taste them. They go perfect with a glass of wine.

Luckily for me only DH likes christmas cake, pudding and mince pies so I get out of making them, lol. I did initially want to decorate a christmas cake but have been too busy anyway. So we are having trifle, pavlova and individual sticky date puddings.

Being Italian Almond bread are Christmas favourites, I also do a jam filled shortbread called "Kiflici" which is from my Croatian hubby's side and also a hazelnut shortbread biscuit...

But most popular treat I usually make are Rosie's chocolate b a l l s...............my b a l l s are very famous

I don't use a recipe just my eye but roughly it is:

approximately 1pkt crushed milk coffee biscuits, 1/2 cup coconut, 1pkt glace cherries chopped, 1/2 cup mixed toasted hazelnuts(skin off) and almonds and about 1/2 tin of top n fill. Mix up together (mix should be moist and rollable but not too gooey) and roll into ba l l s then dip in melted chocolate (I do some milk and some dark) and pop in fridge.

This year I bought some lovely striped red and white bowls from Target (pack of 4 was $5) I will fill a bowl for each family member (our siblings) and wrap in cellophane.....
